Description
Food Waste As A Resource
The "Food Repair" workshop takes place as part of the Urban Food & Design Symposium and focuses on kitchen and food waste as a resource for a circular diet. Under the direction of Sebastian Reichmann (co-founder of Kompost Studio) and Ethel Hoon (Gault Millaut Newcomer of the Year 2021, head chef at Restaurant Klösterle), food waste will be processed into a menu based on the principle of zero waste cooking in order to initiate circular action and research.
